THE CRAFT

Art of Traditional Filter Coffee

Every cup of Janaki filter coffee is the result of four sacred steps, each performed with patience and precision — exactly as it has been done for centuries in South Indian homes.

STEP 01

Peaberry Bean Selection

We carefully select high-quality peaberry coffee beans, known for their richer flavour and balanced sweetness. This ensures that every cup of filter coffee delivers the true character of the coffee bean.

STEP 02

Traditional Drum Roasting

Our beans are slow-roasted in traditional thick drum roasters, the old-fashioned way. With over 39 years of roasting experience, this method brings out the deep aroma and natural oils that define authentic filter coffee.

STEP 03

Perfect Blend

The roasted beans are blended using the right balance of Arabica and Robusta. This careful mix creates the ideal flavour profile — rich aroma, strong body, and the classic taste expected from South Indian filter coffee.

STEP 04

Fine Grinding for Decoction

Finally, the beans are finely ground to the perfect consistency for traditional filter brewing. This ensures a thick, flavourful decoction when used with a brass filter, delivering the true experience of authentic filter coffee.

BREWING GUIDE

Brew It The Traditional Way

Making South Indian filter coffee is a gentle ritual. Follow these five steps and let your home fill with the scent of tradition.

Add Powder

Place 2–3 tbsp of coffee powder into the upper chamber of the brass filter. Press gently.

Pour Water

Pour hot water (92–95°C) slowly over the coffee disc, filling the upper chamber.

Wait & Drip

Let it drip slowly over 15–20 minutes. Patience creates the richest flavour.

Add Milk

Add 1–2 tbsp of decoction to a tumbler, then fill with hot, frothy milk.

05

Serve Warm

Pour between tumbler and dabarah to cool and create froth. Sip and enjoy.
